番茄炒牛肉食譜
材料 - 牛肉- 蕃茄
- 蒜蓉
- 牛肉醃料: - 胡椒粉
- 糖
- 生抽
- 酒
- 水
- 生粉
- 調味料:
- 茄汁
- 片糖
- 白醋
- 酒
- 水
- 老抽
- 生粉水
做法 1. 逆紋將牛肉切片,加醃料醃20分鐘。
2. 蕃茄洗淨、去蒂和切塊;片糖剁碎備用。
3. 鑊燒熱下油,爆香蒜蓉。
4. 中火炒牛肉至半熟,盛起。
5. 蕃茄落鑊,加片糖、茄汁、白醋、酒、水,加蓋煮幾分鐘至蕃茄轉腍。
6. 牛肉回鑊炒勻,加生粉水埋芡並煮至略為收汁,即成!

- 牛肉要逆紋切才不會韌。
- 醃牛肉不要加鹽,因為鹽會令牛肉流失水分,變得又乾又韌。

Stir-Fried Tomatoes with Beef Recipe
Here is the recipe:Ingredients
- beef
- tomatoes
- minced garlic
- Beef marinade:
- white pepper
- sugar
- light soy sauce
- wine
- water
- cornstarch
- Seasoning:
- tomato sauce
- rock sugar, minced
- white vinegar
- wine
- water
- dark soy sauce
- cornstarch water
Instructions
1. Slice the beef against the grain, marinate with marinade for 20 minutes.
2. Wash the tomatoes, remove the stems and cut into chunks; mince the rock sugar.
3. Heat oil in a wok, sauté the minced garlic.
4. Stir-fry the beef over medium heat until half-cooked, remove from wok.
5. Add tomatoes to the wok, add rock sugar, tomato sauce, white vinegar, wine, water,cover and cook for a few minutes until tomatoes are soft.
6. Return beef to the wok, stir-fry until combined, add cornstarch water to thicken the sauce slightly, ready to serve!
Cooking Tips
- Slice the beef against the grain to avoid toughness.
- Do not add salt when marinating the beef, as salt will cause the beef to lose moisture and become dry and tough.
- Return the beef to the wok only after the tomatoes are cooked soft, otherwise the beef will become too tough.
