Hong Kong Curry Chicken Recipe

Ingredients:
- 900g boneless chicken
- 3 medium-sized potatoes (wedge-cut)
- 2 medium-sized onions (wedge-cut)
- 4 cloves of garlic (whole or chopped)
- 250ml coconut milk
- 250ml chicken broth
- 1 tbsp curry powder (use your favorite blend)

Instructions:
1. Sauté the Aromatics: Heat oil in a pan and sauté garlic until fragrant. Add onions and continue sautéing.
2. Add Chicken: Add boneless chicken pieces and cook until lightly browned.
3. Curry Powder Magic: Sprinkle curry powder over the chicken and stir well.
4. Potato Power: Add the wedge-cut potatoes.
5. Creamy Goodness: Pour in coconut milk and chicken broth. Let it simmer until the potatoes are tender.
6. Serve and Enjoy: Serve your Hong Kong Curry Chicken over rice. For an extra touch, sprinkle coconut flakes on top and broil it in the oven for a few minutes before serving.
