這道菜的特色:

- 蠔油是一種傳統的中式調味料,味道帶鹹鮮,能增升食材的鮮味。

蠔皇花菇肉絲扒豆腐食譜

蠔皇花菇肉絲扒豆腐 (英文:Braised Mushroom, Shredded Pork with Tofu in Oyster Sauce)

- 食材:豆腐一塊,花菇(乾或鮮)適量,肉絲(豬或雞)適量,蒜頭幾瓣,薑片幾片,蔥花少許。
- 調味料:蠔油兩湯匙,生抽一湯匙,糖一茶匙,胡椒粉少許,水半碗,太白粉或玉米粉一茶匙。
- 做法:
1. 豆腐切成小塊,用滾水川燙一下去除豆腥味,撈出瀝乾水分備用。
2. 把各種菇類洗淨切成適當大小,如果是乾花菇要先浸發至軟身。
3. 肉絲用生抽、糖、胡椒粉和太白粉或玉米粉醃製十分鐘備用。
4. 熱油鍋,下豆腐煎至金黃色,盛起備用。
5. 再下蒜頭和薑片爆香,把肉絲炒至變色,盛起備用。
6. 同一個鍋中,加入水、蠔油、生抽、糖和胡椒粉調味,煮滾後轉小火燉煮幾分鐘。
7. 加入豆腐和雜菇拌勻,用太白粉或玉米粉勾芡,撒上蔥花即可出鍋。

Braised Mushroom, Shredded Pork with Tofu in Oyster Sauce Receipe

Cut a block of firm tofu into small cubes and pat them dry with paper towels.
Cut some pork loin or tenderloin into thin strips and marinate them with some oyster sauce, soy sauce, sugar, cornstarch, and water for about 15 minutes.
Soak some dried shiitake mushrooms in hot water until soft, then squeeze out the excess water and slice them thinly. You can also use fresh mushrooms of your choice, such as king oyster mushrooms or enoki mushrooms.
Peel and chop some garlic cloves, slice some ginger, and chop some green onions for garnish.
Heat some oil in a large skillet over medium-high heat and fry the tofu cubes until golden and crisp on both sides. Transfer them to a plate and keep warm.
In the same skillet, add more oil if needed and stir-fry the pork strips until cooked through. Transfer them to another plate and keep warm.
In the same skillet, add more oil if needed and sauté the garlic and ginger until fragrant. Add the mushrooms and stir-fry for a few minutes.
Add some water, oyster sauce, soy sauce, sugar, and pepper to make a sauce. Bring it to a boil and then lower the heat to simmer.
Add the tofu and pork back to the skillet and toss to coat with the sauce. Cook until everything is heated through and the sauce is slightly thickened.
